
STEEL CUT OATMEAL WITH WALNUTS, APRICOTS & APPLES

- 1 Cup Irish Steel Cut Oats Uncooked
- ½ Cup Raw Walnuts Chopped
- ½ Cup Apricots Chopped
- 2 Granny Smith Green Apples (or any apples you prefer) Peeled and Chopped
- 1 Cup Unsweetened, Vanilla Almond Milk
- ½ tsp. Organic Cinnamon Ground
- 1 tsp. Organic Vanilla (pure)
- Agave Nectar (optional)
- Blueberries (optional)
Instructions
- In a medium saucepan add 4 cups water and bring to a boil. Add the uncooked oats and cook according to package. Approximately 30 minutes.
- During the last 15 minutes of the oats cooking add the cinnamon, vanilla and apple. Cook, stirring constantly, until oats are cooked and mixture has thickened.
- Cover. Once ready to serve, scoop the oats into small serving bowls, top each bowl with the apricots, blueberries and walnuts.
- Pour warm almond milk onto each. Drizzle with agave nectar (optional).
