5 Spiced Pulled Chicken Sliders with Sweet & Spicy Slaw

Spiced Pulled Chicken

  • 1.5 LB Boneless/Skinless Chicken Thighs (6 pcs)
  • 4 TB Vegetable Oil
  • 1 Tsp Sesame Oil
  • 1 Tsp Minced Garlic
  • 2 TB CBK Spice Blend "5 Spice Habanero & Ginger"
  • 1/2 Tsp White Pepper
  • 2 TB Brown Sugar
  • 1/2 Tsp Red Chili Flakes
  • 1.5 Cup Cooling Tea ((Steeped Strong))
  • 1 Sm Bulb – Fresh, Peeled Ginger
  • 2 Cup Mayonaisse
  • 1 Tsp Sugar
  • 1/4 Cup Salt
  • 1 Tsp Ginger (Ground)
  • 1 TB Water
  • 6 Brioche Slider Buns

Sweet & Spicy Slaw

  • 2 Cup Cabbage (Shredded)
  • 1/2 Cup Carrot (Shredded)
  • 1/2 Cup Purple Cabbage (Shredded)
  • 1/2 Cup Cilantro (Chopped)
  • 2 TB Brown Sugar
  • 1/4 Cup Jalapeno (Sliced Thin)
  • 1 TB Rice Wine Vinegar
  • Salt & Pepper to Taste

Sweet & Spicy Slaw

  1. In a large mixing bowl, combine the cabbages, carrot, cilantro, jalapeno, brown sugar, and vinegar.

  2. Toss lightly with tongs.

  3. Season to taste with salt and pepper. Refrigerate.

Sweet Mayo Spread

  1. In a small mixing bowl, add the mayo, sugar, salt, ground ginger, and water.

  2. Whisk together and refrigerate.

Spiced Pulled Chicken

  1. In a large pot over medium-low heat, add the vegetable oil, sesame oil, brown sugar, garlic, CBK "5 Spice Habanero & Ginger" spice blend, white pepper, and red chili flakes.

  2. Cook together until fragrant – about 1-2 minutes.

  3. Add the chicken thighs to the pot and pour the Olong tea.

  4. Bring to a boil and reduce to a simmer.

  5. Cook the chicken until done.

  6. Remove the chicken thighs and place on a cutting board. Shred the Chicken and put aside.

  7. Keep the poaching liquids simmering in the pot and cook on low until the sauce is thick.

  8. Add the shredded chicken to the pot and stir to coat.

To Assemble the Sliders

  1. Spread the sweet mayo on inside of the slider buns

  2. Top with the hot shredded pulled chicken

  3. Add the jalapeno slaw and serve!
