
Parsnip Parmesan White Truffle Fries

- 4 lrg. Parsnips, Peeled, Sliced into Fry 'Like' Sticks
- 1 Tb. Olive Oil
- 2 tsp White Truffle Oil
- 1/4 C Fresh Parsley Chopped
- 1/2 C Parmesan Cheese Grated
- Sea Salt & Pepper to taste
Instructions
- Preheat oven to 400 degrees
- Using a baking sheet, line with foil and spray with non-stick cooking spray
- In a large bowl, toss the peeled parsnips with olive oil, salt, and pepper
- Spread onto the foil lined baking sheet and bake for about 20-25 minutes
- Turn the parsnips over and bake for another 12-15 minutes or until golden brown
- Using another mixing bowl, combine the parsley, parmesan, and truffle oil. Add the parsnip fries and toss
