Parsnip Parmesan White Truffle Fries

Ingredients
  

  • 4 lrg. Parsnips, Peeled, Sliced into Fry 'Like' Sticks
  • 1 Tb. Olive Oil
  • 2 tsp White Truffle Oil
  • 1/4 C Fresh Parsley Chopped
  • 1/2 C Parmesan Cheese Grated
  • Sea Salt & Pepper to taste

Instructions
 

  • Preheat oven to 400 degrees
  • Using a baking sheet, line with foil and spray with non-stick cooking spray
  • In a large bowl, toss the peeled parsnips with olive oil, salt, and pepper
  • Spread onto the foil lined baking sheet and bake for about 20-25 minutes
  • Turn the parsnips over and bake for another 12-15 minutes or until golden brown
  • Using another mixing bowl, combine the parsley, parmesan, and truffle oil. Add the parsnip fries and toss
