KENTUCKY BOURBON CANDIED YAMS

Ingredients
  

  • 3 lbs Sweet Potatoes
  • 1 stick Unsalted Butter
  • 1 cups Dark Brown Sugar
  • 1 cups Granulated White Sugar
  • ¼ cups Kentucky Bourbon (optional) Spiced Rum works well too!
  • 1 Navel Orange, Juice and Zest
  • 1 tbsp Vanilla Extract
  • 1 tsp  Maple Syrup
  • 1 tsp Ginger Paste
  • 2 tsp Cinnamon
  • 1 tsp Ground Nutmeg
  • Pinch of Salt
  • Whole Cloves garnish
  • Cinnamon Sticks garnish
  • Marshmallows topping
  • Cinnamon Sugar topping

Instructions
 

  • METHOD:
    Pre heat the oven to 400 degrees. Peel, wash and cut the sweet potatoes into 1-1 1/2 cubed pieces.
    Pat dry with a paper towel and add the sweet potatoes to a mixing bowl.
    In a saucepan make the candied mixture by adding the butter, brown and white sugar, whisk to blend together. Then add the Bourbon, orange juice, zest, vanilla, maple syrup, ginger paste, cinnamon, nutmeg and a pinch of salt. Stir together until the mixture is blended and syrupy. Pour over the sweet potatoes and toss them to ensure they are coated evenly. Pour the buttery sweet potato mixture into a 9x13 or 3 qt baking dish. Cover with foil and bake for approximately 50-60 minutes, stirring the potatoes every 15 minutes to ensure they cook evenly. Remove the foil during the last 15-20 minutes and add a few cinnamon sticks, whole cloves (to gamish) and top with a few sprinkles of cinnamon sugar. Place back in the oven. Once the potato mixture is caramelized and the potatoes should be fork tender, add a few marshmallows place under the broiler for a few minutes and lightly brown. Remove and enjoy!
