Add the apples, pears, oranges, star anise, rosemary sprigs, and cinnamon sticks to a large pitcher.
Add the white wine, pear liquer, apple cider, and tonic water. Stir.
Cover and refrigerate until ready to use.
When ready, fill glasses with ice and pour sangria into the glasses.
Gently spoon the fruit into the glasses and garnish with a sprig of rosemary.
